La Concha Resort in San Juan will debut the Mediterranean-inspired restaurant Levant this fall.
Helmed by Michelin-starred chef Michael White, Levant will occupy the resort's iconic Perla building: a seashell-shaped building designed by Mario Salvatori in 1958. Levant will boast midcentury-meets-modern elements and nautical-inspired details that include the use of white oak, ocean blue tiles, artwork by local artist Angel Colon, a backdrop of natural stone materials from the Mediterranean and Murano glass lamps.
Inspired by his travels across Europe and the Mediterranean, the resort said White's cuisine will transcend traditional Italian fare, offering a menu infused with his signature style and a global palate, according to the resort, incorporating flavors and ingredients from Spain, Italy, Greece and beyond. White's culinary accolades include a James Beard award and five simultaneous Michelin stars. In addition, White has launched eateries including Paranza at The Cove at Atlantis Paradise Island and Marea in New York.
Lavant is part of the resort's propertywide enhancements in celebration of the resort's 65th anniversary.
La Concha Resort, part of the Condado Collection, whose portfolio includes the Condado Vanderbilt and Condado Ocean Club, offers 243 oceanfront rooms and a 235-suite tower. The Condado Collection is owned and operated by Paulson Puerto Rico.
"We are confident that our visitors will be enchanted by the restaurant's decor, lively ambience and exceptional culinary selections," said Rolando Padua, president of Paulson Puerto Rico.
